How to make it
Put the entire bag of sweet freeze-dried ricotta into a bowl and add 320 g of cold water.
Mix with a whisk until a creamy consistency is obtained.
Put the ricotta in the pastry bag, cut off the tip and stuff the cannoli.
Dip the cannoli in pistachio and almond grains to decorate the sides.
Pasticcere’s tip:
Put the ricotta in the refrigerator for one hour to eat a fresh cannolo as if you were in Sicily.
